Ok…….. I do not post nearly enough. So I decided I would try a “Quick and Dirty” post each week. No forethought, no editing……..just put it out there.
So…………what did I have for breakfast this morning? Arepas! I should be a culinary trend setter. I was eating arepas 15 years ago. Long before articles about them started popping up in the food section of the New York Times. I was courting romesco sauce long before she made a nightly appearance on Chopped. I have been preserving lemons for decades. Yes, decades. I’m just sayin’.
Anyhoo – – if you have not fallen in love with these babies yet – – you should give them a try. I became infatuated with them when I read an article stating they were the first solid food babies ate in certain regions of the world. I spent a whole year trying to perfect them. I must have tested 100 recipes in all. During that time I happened upon a blog by a Colombian woman who said she preferred the electric arepa maker. I will try anything once. Ok – – ALMOST anything.
Anyhoo – – I worship this gizmo.
The basic recipe calls for P.A.N. Harina de maiz, water and salt.
I REALLY like to jazz mine up. I substitute chicken broth for 1/3 of the water. I add chilies and grated sharp cheddar cheese. In addition to all of that – – I added a glug of cilantro infused olive oil today.
They were dreamy! I almost proposed to them.
Anyhoo – – my friend, Bob, says they stuff them with cheese and deviled ham in his neck of the woods. In the spirit of “trying anything once” – – I took that suggestion for a test drive.
Magnificent! Arepas are the hot, hip, happening new way to rock a sandwich! I suggest you give it a whirl!
